Strawberry Sorbet Magic!

-By Hertha J. Woodruff, A.M.L.S., M.A.

Welcome spring!  Welcome lighter fare recipes!  Here is a low-calorie, two-ingredient dessert/snack recipe that works like magic.  There is no added sugar.  Thus, your dental health and blood sugar will benefit from this treat.   All you need is a quart, 16 ounces, of strawberries and the juice of fresh oranges.  It will make a simple and elegant dessert/snack that will take less than 5 minutes to prepare.  Strawberries and oranges are excellent sources of vitamin C.  Strawberries also have a good amount of fiber.

This recipe also can be used to make popsicles.  All you need is to fill popsicle molds with the prepared strawberry sorbet and freeze.  Kids will love them!  Moms will love them too because they are healthy snacks!

Strawberry Sorbet Magic!

  • 16 ounces, 1 quart, of fresh or packaged individually, frozen strawberries with no added sugar or syrup  (Note: Whole Foods Market carries 16 ounce, frozen strawberries.)
  • juice of 1 to 2 fresh oranges.  Large, navel oranges work well.

  1. Remove the green leaves from a quart of fresh strawberries and freeze until frozen solid or use a 16 ounce, 1 quart, package of individually, frozen strawberries.
  2. Place strawberries into a food processor.
  3. Add the juice of one to two fresh oranges to the strawberries.
  4. Process strawberries with juice of fresh oranges until the desired consistency.
  5. Spoon strawberry sorbet into small bowls or into fancy, stemmed glasses.
  6. Garnish each serving with a slice of peeled kiwi.  (optional)

Yield:  4 to 6 servings

This is quick and easy!  Enjoy!!
